I remember the amazement of us kids when they told us: "THIS EVENING WE GO OUT TO DINNER"..
Rare occasions, lived with pathos ... the good suit, the recommendations on how to sit at the table and thanks to the one who would have offered it to us.
Here, our little Bistrot puts on its good suit and politely opens its doors to taste a menu made of SIMPLE DISHES but where the raw material, craftsmanship and research are the masters.
The scent of our ancient grains will be the leitmotif of each dish.
Our biodiversity is something tangible! Verna like its mountain, the very fragrant Gentilrosso, the Einkorn that tastes of hazelnuts, the Frassinetto that comes from the river, the Saragolla known as the yellow or better known as Khorasan and... We could continue with other names that make the history of good bread, the one low in gluten, with the sourdough and which rises slowly.
We grow them, stonmill them and we will offer them to you by translating them into tasty and never predictable dishes!
